Is it possible to have non-owner insurance?

My wife is the registered owner of a car in our household, but she hasn’t driven it at all—zero times—in the two years we’ve had it. Can I remove her from my policy as a driver since she never drives, even though she’s the sole owner of the vehicle?

For your reference, we have an Esurance policy in NY that covers multiple cars.
